Eye Health Recipes – Chickpea Salad


Autumn Chickpea Salad (3986173540)

1 can of chickpeas, drained and rinsed
1 pint grape tomatoes, halved
25 large basil leaves chopped
3 cloves garlic, minced
1 tbsp red wine vinegar
1 tbsp apple cider vinegar
2 tsp olive oil
½ tbsp honey
Pinch of salt

Place chickpeas, tomatoes and basil in a bowl.Whisk together all remaining ingredients and pour over bowl. Toss to coat.

Chickpeas are a great source of protein. They also contain high levels of iron, zinc folate, phosphorus, B vitamins, manganese, copper and many antioxidant phytonutrients. Two cups of garbanzos fulfill the recommended daily fiber requirement and can help to lower LDL cholesterol and triglycerides.

Eye Healthy Recipe – Roasted Eggplant Salad


Eggplant does not have an overwhelming supply of any one particular nutrient, but they do contain an impressive array of many vitamins and minerals such as folate, potassium, manganese, vitamin C, vitamin K, phosphorus, copper, thiamine, niacin, magnesium and patothenic acid. One variety, Black Magic, contains very high amounts of the antioxidant phenolics. Phenols are very powerful free radical scavengers. These scavengers help prevent heart disease and cancer, but cause the slightly bitter taste of the eggplant. Additionally, some eggplant skin contains nasunin – another potent antioxidant that is known to help protect the lipids in brain cell membranes.

2 medium eggplant
1 can garbanzo beans drained and rinsed
4oz crumbled goat cheese
1 ½ cup cherry tomatoes halved
1/3 cup fresh parsley chopped
¼ cup reduced sodium soy sauce
1 tbsp honey1 tbsp olive oil
1 tsp smoked paprika
4 cloves garlic minced
Juice from 1 large lemon
Salt and pepper

Preheat oven to 425 degreesIn large bowl, toss eggplant with ½ tbsp. olive oil, salt and garlic. Place eggplant on a bakingsheet lined with parchment paper sprayed with no stick spray. Cook 30-35 minutes until tenderand light brown. Cool 5-10 minutes.Whisk oil, lemon juice, soy sauce, honey and paprika.Place cooled eggplant in a bowl with tomatoes, garbanzo beans and parsley. Top with dressingand toss gently to coat.Gently stir in goat cheese. Serve at room temperature.
